Can you mix Shimano XT and XTR?
SLX M7100-level cranks will only be available in 165, 170 and 175mm lengths, and with 30, 32 and 34T chainrings. XTR, XT and SLX chainrings are all cross-compatible, and so fitting a 38T XTR ring to the XT crank, or a 28T XT ring to an SLX crank is totally possible.
